Beschrijving
Butterfly-pea bloementhee is een cafeïnevrije kruidenthee, of tisane, een drank gemaakt van een afkooksel of infusie van Clitoria ternatea-plantenbladeren en ofwel gedroogd citroengras of gedroogd Pandanus-blad. Ternatea is ook bekend als vlindererwt, blauwe erwt, Aprajita, Cordofan-erwt en Aziatische duivenvleugels.
Vlindererwtenbloemthee wordt al eeuwenlang gebrouwen, maar is pas onlangs geïntroduceerd bij theedrinkers buiten het inheemse gebied. Het is afgeleid van een plant die veel voorkomt in de meeste Zuidoost-Aziatische landen.
Vlindererwtenbloemthee behoudt veel van de geneeskrachtige eigenschappen van de Clitoria ternatea, terwijl het ook de diepblauwe kleur van de bloembladen extraheert, waardoor de plant al eeuwenlang een populaire kleurstof is. Een kenmerk van de thee is dat de vloeistof van kleur verandert afhankelijk van de pH-waarde van de stof die eraan wordt toegevoegd; als je bijvoorbeeld citroensap aan de thee toevoegt, wordt het paars.

Plaats 10-15 gedroogde vlindererwtenbloemen in een kop heet water.
Na 4-6 minuten heb je blauw water.
Voeg een paar druppels citroensap toe als je van de zure smaak houdt. (De kleur van het water verandert van blauw naar paars)
